Plant growth is dependent on temperature and on light, and other things. We can plant cold hardy greens in the hoophouse in the fall and they grow well into late October. They really slow down as the days get shorter and pretty much hibernate through December and January. If you pick frozen greens they turn to mush when they thaw. If you pick them while they are thawed they are OK. It has been a while since we’ve had enough sunshine for me to head out to the hoophouse to pick any, and the last time I did they looked pretty sad and hadn’t grown for a while. Apparently they are enjoying the increasing day length because they are showing a little recent growth.

They sure tasted good! In the bowl are red and green salad bowl lettuces, mizuna, tatsoi, komatsuna, red giant mustard, red russian kale, and probably a few other things I’m not remembering at the moment.
My standard salad dressing is a mix of olive oil, balsamic vinegar, and maple syrup. You vary the ratio depending on how oily, vinegary, or sweet you like it.
