Greetings.
I worked hard last week to make a good first impression, considering the growing conditions. Now my quandary is that I set your expectations. This week is the same as last week, without the carrots, but there should be plenty of strawberries. Everyone should get a head of lettuce, but lettuce doesn’t like heat and it took a real hit the last couple of days. So, lettuce is one, mostly small, head. BUT, I have lots of salad mix, so you will have salads. I think the broccoli will stretch for everyone.
My two current favorite ways to fix most “greens” (Swiss chard, collards, kale, etc) are:
- Olive oil and garlic in the skillet. Toss in a handful of golden raisins and let them plump. Slice the greens in about 1 inch strips (you may or may not cut the stems out and start cooking first since they are crisper) and cook just until it changes its color. Then I top with sunflower seeds. The raisins give sweetness. Another combination is walnuts and craisins.
- Olive oil and garlic. Saute lightly. Top with a nice balsamic or other vinegar.
I got two cookbooks this winter that I love. You can get them locally or order them from Amazon through my website: http://rhomestead.com/recipes.html
They are How to Cook Everything Vegetarian by Mark Bitman and The Modern Vegetarian Kitchen by Peter Berley. I like the Modern Vegetarian Kitchen because the recipes don’t have dairy except for a few with yogurt, and since I am allergic to dairy I try to avoid it (but love yogurt and cheese, sigh). The Recipes in How to Cook Everything Vegetarian are similar to what I wrote above – a simple recipe followed by several variations.
On your registration forms I said we might offer a Tuesday pickup. We have six folks who are picking up on Tuesdays instead of Fridays. If anymore of you wish to change to a Tuesday pickup, just let me know.
I ordered a little more seed this week ($31 of seed and $10 shipping). The customer service person said lots of folks have been reordering seed to replant. All but my very first plantings are looking good, so I guess we are not in too bad of shape.
For the Tuesday folks, I don’t know yet whether we will have the pickup down in the field or up at the house. I will let you know before Tuesday.
