Par moi

In the spring wild dandelions are delicious and highly nutritious.  In mid-summer the great “weed” is par moi. It is good and extremely nutritious.  It has very high levels of omega-3 acids, vitamin E,  It is great added to salads since it gives an entirely different texture, and good in potato salad.  Another farmer shared their favorite – par moi with chopped tomatoes, onion or garlic optional, olive oil and vinegar and spices. They also use it alone as a salad in the summer.  Great crunchy texture without toughness, can be prechilled for a hot day.
