We grow snow peas and snap peas. Snow peas historically have been mainstays of oriental cooking. They are the peas that are thin with tiny peas. I prefer the peas a little bigger, making lumps, since they add sweetness. Snap peas are a relatively new development. They are best when fat (peas fully formed), even to the point of losing the glossy finish. The pods of both snow and snap peas are edible.
Folks ask how I cook them and I tell them I don’t. I just eat them off the vine. Snow peas would also be great in stir fries or soups. They are so good raw I see no point in cooking them.
